Protein Pancakes

I make protein pancakes at least three times a week in our family.  Everyone loves that so it’s an easy go-to breakfast around here.  Sometimes I use the Kodiak pancake mix (found at Costco), and add two eggs and unsweetened almond milk.  But I also love making them from scratch when time permits.  Recipe below.  They are tasty!  We add a little almond or peanut butter on top.  Delicious.

Ingredients
1 1/2 scoops Qwest or UMP protein powder
1/3 cup quick oats
1/2 cup liquid egg whites
1/2 cup water
1 Tbsp vanilla extract

Instructions
Blend all ingredients, then cook in a nonstick pan as normal pancakes
