Stuffed zucchini boats:
Cut zucchinis in half, length wise. Scrape out seeds and punch a holes in the zucchini. Bake at 350 until soft.
On the stove cook desired meat (ground beef or turkey), add diced tomatoes and tomato sauce. Stuff zucchinis with meat – then, sprinkle with parmesan cheese, avacado and crumbles of bacon on top if desired.
