I don’t often talk about my husband’s autoimmune disease on here, mostly because I don’t really feel like it’s my story to tell. But as the spouse of someone who has had chronic pain for almost two years now, I realize I do have a thing or two to share, from MY perspective. I try not to complain, since I’m not the one in pain and I’m not the one having to eat a very strict diet. But if I’m being honest it hasn’t been easy for me either. It’s hard to watch someone you love be so uncomfortable. And it’s frustrating to hear that NOTHING helps. #Next week will be the 3 month mark of his #aipdiet . I wish I could say he has felt some relief from it but he really hasn’t. Unfortunately. Despite the bad news I’ve tried my hardest to keep up with making meals he can eat, trying new recipes and always having food prepared. It has been stressful. But I’ve also enjoyed the challenge and love making new things!#I haven’t posted much food on here lately because sometimes I feel like I’m just trying to keep my head above water; with making sure his meals are taken care of, getting my kids needs met, managing the household, working part-time, oh and training for this upcoming #halfironman 🤪 But I made these amazing #aipdiet approved tacos 🌮 last night and wanted to share them! They are delicious! It’s ground beef with cauliflower rice. The flavor is so good with all of the added seasonings. Super tasty!
