Meal prep Monday!!! Prepping even ONE meal for the week makes a huge difference in my day. Pick one item to prep this week, then maybe prep two next week. #One of the easiest meals to prep are eggs!! I either make a batch of hard boiled eggs to eat throughout the week or make it into a casserole or individual muffins, and then divide them up into 5 containers to grab and go. This is a casserole I made yesterday with eggs, sausage, spinach, tomatoes, mushrooms and cheese. (I forgot to add peppers but those are great in it too!)
